This is a little bit different of a post for me. I made a recipe, I altered it a bit, I took pictures, I ate it…. but, technically, I cannot call it my own. This recipe is from Epicurious for vegan chocolate cheesecake. It is AMAZING. I really hope you all are able to give it a try.
I did make one adjustment; where this recipe calls for 1/3 cup water, I used espresso. I mixed about 1tsp of instant espresso into the water, prior to incorporating with the caramel. The cake did take about 15 minutes longer to bake for me. I don’t know if it is my oven temperature or the addition of the coffee. In any case, other than the increased time, everything else went well with the recipe, as written.
