Chocolate Cheesecake

This is a little bit different of a post for me.  I made a recipe, I altered it a bit, I took pictures, I ate it…. but, technically, I cannot call it my own.  This recipe is from Epicurious for vegan chocolate cheesecake.  It is AMAZING.  I really hope you all are able to give it a try.  

I did make one adjustment; where this recipe calls for 1/3 cup water, I used espresso.  I mixed about 1tsp of instant espresso into the water, prior to incorporating with the caramel.  The cake did take about 15 minutes longer to bake for me.  I don’t know if it is my oven temperature or the addition of the coffee.  In any case, other than the increased time, everything else went well with the recipe, as written.

Yay! I’ve been dying to get my hands on this recipe since you posted the gorgeous pic on Instagram! Chocolate & espresso flavors compliment each other so nicely, good call! Can’t wait it make this!!!!
